The Mall at Wellington Green is about to get louder in the best way. Copper Blues, a live music pub and kitchen with sister rooms in Miami and Phoenix, is opening this month at 10300 Forest Hill Boulevard, right next door to the brand new Palm Beach Improv. The pitch is simple: cover bands on the weekends, acoustic sets at happy hour, a full kitchen, and no cover charge at the door.

A stage, not a background playlist

Most mall restaurants treat music as wallpaper. Copper Blues builds the room around it. According to the venue's Palm Beach page, the format is acoustic performers during happy hour and full bands on weekend nights, with DJs and tribute acts rotating in for special events. The cover bands play without a cover charge, which matters in a part of the county where a night of live music usually means a drive east to Clematis Street or Delray.

The venue has been teasing its grand opening weekend on its own Instagram feed, promising a full weekend of live music, cocktails, food, special tastings and giveaways. The Palm Beach Improv's FAQ page lists Copper Blues as opening in October 2026. For the exact grand opening lineup and set times, the venue's Instagram account and its events page are the places to watch.

Comedy and a band on the same night

The pairing with the Improv is the real story for Wellington. The comedy club runs a wait list for sold out shows, opening in person about an hour before showtime, and its own FAQ tells guests on that list to hang out at Copper Blues next door while they wait. That turns a gamble on a late ticket into a reasonable night out: grab a table and a drink, listen to a band, and walk over if seats open up.

A few Improv house rules are worth knowing before you plan the double feature. There is a two drink minimum per person in the showroom (non-alcoholic drinks count). Shows are 21 and over, except Monday through Thursday, late Friday and Sunday shows, which are 18 and over. Parking at the mall is free and outdoors.

What is on the menu

The kitchen leans toward shareable pub food. The venue has been previewing its Loaded Copper Nachos and a Wing Tower stacked for the table. The brunch menu already posted for the Wellington location runs Saturday and Sunday from noon to 4 p.m., with food served until 3:30 and bottomless drinks from noon to 3.

A sampling from that brunch list: mini beef empanaditas with cilantro aioli ($14), Classic Copper Wings with a choice of buffalo, sweet Thai chili, habanero bourbon BBQ or lemon pepper ($18), chicken and waffle sliders with a chili maple glaze and bacon jam ($16.50), croquetas with Cuban bread ($14), an 8 ounce churrasco steak and eggs ($22) and a Nutella stuffed French toast topped with berries ($13). Bottomless mimosas, Bloody Marys or Blue Moon run $30, and there are bottle packages for bigger groups.

The Cuban bread and churrasco are a tell: this is a menu written with South Florida in mind, not a national template dropped into a food court.

Hours, reservations and private rooms

Posted hours are generous for a mall venue. Copper Blues is set to run 4 p.m. to midnight Monday through Wednesday, 4 p.m. to 1 a.m. Thursday, 4 p.m. to 2 a.m. Friday, 11 a.m. to 2 a.m. Saturday and 11 a.m. to midnight Sunday. Reservations go through OpenTable, and the phone number is (561) 404-4101.

For groups, the venue advertises a private dining room, semi-private areas, VIP reserved tables and full buyouts, which puts it in the mix for birthdays, office parties and fundraisers in the western communities. There is also a Copper Club sign-up that promises early access to events and members only nights.

What it means for the western communities

Wellington has world class horses, good parks and plenty of places to eat. What it has been short on is a late night room with a real stage. With the Improv and Copper Blues sharing a wall at Wellington Green, residents of Wellington, Royal Palm Beach, Loxahatchee and Greenacres can now catch a comedian and a cover band without getting on I-95. It is the kind of anchor that gives people a reason to show up after the stores close.
