Florie's, the restaurant Chef Mauro Colagreco runs at Four Seasons Resort Palm Beach, has set an eight-night wine dinner series that starts Thursday, Oct. 29, and runs through May 2027. Each dinner seats 24 people. The last one, built around Opus One, seats 12.

The resort announced the series on Oct. 16. Every evening is organized around a single producer or region, and Colagreco writes a four-course menu for each one starting from the wines rather than the other way around. The lineup moves from Bordeaux to the Languedoc, Carneros, Champagne and Oregon, with nights given to Harlan Estate and Château Lafite Rothschild along the way.

How each evening runs

Guests start on the Florie's terrace with a welcome pour and canapés, then move into the restaurant's Private Dining Room, where everyone sits together for dinner. The shared table is deliberate: the resort describes the format as a dinner meant for conversation among the guests as much as for the wine.

Florie's is Colagreco's only restaurant in the United States. He leads more than 25 restaurants around the world, including Mirazur, which was voted the best restaurant in the world in 2019. In Palm Beach the menu leans Mediterranean, with live-fire cooking and dishes such as lobster risotto, Dover sole and braised short rib.

The eight dates

  • Thursday, Oct. 29, 2026: Bordeaux with Bernard Magrez. The opener tours the Magrez portfolio, including Château Pape Clément.
  • Wednesday, Nov. 18: Gérard Bertrand. Wines of the South of France, with the focus on the Languedoc.
  • Thursday, Jan. 21, 2027: Bouchaine Winery. A Carneros estate in Napa Valley opens the new year.
  • Tuesday, Feb. 9: Harlan Estate. An evening on the Napa Valley estate and its Cabernet Sauvignon.
  • Thursday, Feb. 25: Champagne Laurent-Perrier. A menu built to pair with the house's Champagnes.
  • Thursday, March 18: Château Lafite Rothschild. The series returns to Bordeaux.
  • Thursday, April 15: Oregon. An emerging Oregon winery made under the direction of a Burgundy winemaker. The resort has not yet named it.
  • Thursday, May 20: Opus One. The finale, capped at 12 guests.

Why the seat count matters

Twenty-four seats a night across seven dinners and 12 at the finale comes to 180 seats for the whole season. The resort calls the seating intentionally limited. Prices and start times were not listed in the announcement, so the reservation listing is where those details will appear.

The series sits alongside the restaurant's regular calendar. Golden Hour runs daily from 4 to 6 p.m. in the bar and lounge, with some of the restaurant's dishes and cocktails at a lower price. On Thanksgiving, Nov. 26, Florie's serves from 12:30 to 7:30 p.m. with chef stations and a seafood display.
