Two new restaurants are headed to THesis Hotel Miami at 1350 S. Dixie Highway in Coral Gables, and both are scheduled for the first half of 2027. One is Katsuya, the Japanese sushi and robata brand most closely tied to Sam Nazarian's sbe. The other is a Mediterranean restaurant from chef Fabio Trabocchi, the chef who opened Fiola in Coral Gables in 2018. The hotel announced the plan on its own stories page this month, along with a bigger change: sbe has now taken over every food, beverage and event operation in the building.

Who is running the kitchen now

The deal pairs sbe with Nolan Reynolds International, known as NRI, which owns and developed THesis. Under the new arrangement, sbe operates the hotel's current venues, which the hotel lists as Mamey, The Collab and Ivy Rooftop. That means the company is already running dinner service and events at the hotel today, months before either new restaurant opens.

The hotel frames the partnership as a local one. Nazarian, sbe's founder and CEO, lives in Coral Gables with his family, according to the announcement, and he described bringing Katsuya to the city as a personal project tied to the place where his family eats and celebrates. NRI CEO Brent Reynolds said the company built THesis to be a gathering place for the city rather than just a place to sleep, and that the hotel has filled that role for more than six years. The announcement also notes that NRI has been investing in the Paseo de la Riviera neighborhood around the hotel for years.

What Katsuya brings

Katsuya is built around the cooking of master sushi chef Katsuya Uechi, who mixed traditional Japanese technique with California-style flavors. At the brand's location at SLS Baha Mar in the Bahamas, the menu is organized around sushi and robata, with dishes such as crispy rice topped with spicy tuna, yellowtail sashimi with jalapeño and miso-marinated black cod. The THesis announcement describes the Coral Gables restaurant in similar terms: Japanese cuisine, sushi, robata and signature cocktails.

The hotel calls Katsuya one of the brands most closely associated with sbe. The Coral Gables restaurant will take a space inside the hotel's building on South Dixie Highway, and it will be the brand's Coral Gables debut.

Fabio Trabocchi comes back to the Gables

Trabocchi ran Fiola in Coral Gables from 2018 through 2025. The THesis plan is not a revival of that restaurant. According to the hotel, he is creating an entirely new Mediterranean restaurant with its own identity, designed only for THesis. The name, the look of the room and the menu have not been announced yet; the hotel says those details will come closer to the 2027 opening.

Three places to eat under one roof

Once both restaurants open, the hotel expects to have three distinct dining spots: Katsuya, the Trabocchi restaurant and Ivy Rooftop, its open-air pool bar and lounge on the third floor. The goal, in the hotel's telling, is to give residents different reasons to come back on different nights of the week, from a weeknight dinner to a bigger celebration.

Events are part of the plan too. THesis has 6,500 square feet of meeting and event space, and under sbe the hotel is putting more weight on private dinners, milestone parties and corporate gatherings. Ivy Rooftop can be booked in its entirety for a private event.

What you can do now

Nothing new opens until 2027, but the hotel's current venues are open and are now operated by sbe. Ivy Rooftop serves lunch, dinner and cocktails above the Gables tree canopy, and the hotel takes reservations and private event inquiries by phone. The hotel says it will release more details on the two new restaurants as they are confirmed.
