The West Palm Beach team that raises its own cattle in Okeechobee is opening a steakhouse. Rueshaw, from the group behind Rancher's Reserve, Fern and Steak Shop, is set for 424 Park Place, on the same street as the group's butcher shop at 513 Park Place. The restaurant's own page gives spring 2027 as the expected opening.
Rueshaw calls itself a New American steakhouse. The group says it will serve Florida-raised Akaushi beef from its own herd, cook over live fire and make its food from scratch.
From one restaurant to a ranch, then back again
The project closes a loop that started with a single dining room. Nicholas Scalisi, who grew up in his family's produce business and began working in restaurants at 15, opened Fern at 501 Fern Street in West Palm Beach in 2019. In 2021 he founded Rancher's Reserve with a small herd of Wagyu cattle, aiming to raise the beef his kitchen served.
The company added heritage pork and pasture-raised hens, began selling its meat at local green markets in 2024 and opened Steak Shop by Rancher's Reserve on Park Place in 2025, a neighborhood butcher shop and provisions market selling its own Wagyu and pork. Chris Muneio has been a partner and investor since the start, according to the company.
The herd and the ranch
Every bull in the Rancher's Reserve program is fullblood Akaushi, and the company runs two lines from them:
- Orange Fed Florida Akaushi: fullblood Wagyu bulls bred to fullblood Akaushi or Akaushi-cross cows, raised on pasture and finished on the ranch's orange-fed ration. The company describes this as the top of its marbling program.
- Florida Cracker Beef: Akaushi bulls bred to fullblood Florida Cracker cows, which the company calls one of Florida's most historic cattle breeds.
The ranch is centered in Okeechobee and extends to Micanopy and Lake City, just over 700 acres in all. The company says it uses no pesticides or chemicals inside its fence lines. It also raises Berkshire and Duroc pigs on pasture, finished on non-GMO heirloom corn, and heritage-breed hens that range across the cattle pastures.
Two addresses on Park Place
With Steak Shop at 513 Park Place and Rueshaw coming to 424, the group will have its butcher counter and its steakhouse on the same street, with Fern nearby on Fern Street. The company has not yet posted a menu, prices, hours or a reservation system for Rueshaw. The Rueshaw page links to an Instagram account for updates.
Until it opens
Rancher's Reserve beef is already sold at Steak Shop, 513 Park Place, which also handles takeout orders through the Rancher's Reserve site. Fern is at 501 Fern Street, No. 104. The group can be reached at [email protected].
