Las Olas Boulevard has a new supper club with a 1980s soul. Caviar Club, the most ambitious project yet from South Florida restaurateur Marc Falsetto, was set by Greater Fort Lauderdale's convention and visitors bureau to open on Oct. 27, bringing tableside service, a wine list of more than 300 bottles and a dedicated martini program to downtown Fort Lauderdale's main street.
Despite the name, it is not a caviar bar. Falsetto Hospitality describes Caviar Club as an American restaurant and steakhouse that takes familiar comfort food and dresses it up for an evening out, with caviar appearing throughout the menu rather than standing alone.
What is on the menu
The kitchen leans on theater. According to Falsetto Hospitality's announcement, Dover sole is filleted at the table, prime dry-aged and Wagyu steaks are carved in front of guests, and the French dip arrives with its jus served in Baccarat crystal. Caviar turns up on towering seafood displays and on top of Wagyu dishes.
The executive chef is Jeremy Loya, who started his career under Rick Bayless and went on to run kitchens at Soho House, Desert Mountain Club and Caldera House, a property recognized with a Michelin Key. Desserts come from Alicia Montalvo, the corporate pastry chef for all Falsetto Hospitality concepts, who grew up in El Salvador and learned the food trade from a grandfather who made cheese by hand.
The bar side gets equal billing. The tourism bureau's fall announcement lists more than 300 wines and a martini program, and late in the evening DJ sets turn the dining room into a lounge.
A room built around the 1980s
Falsetto Hospitality hired Garrett Singer Studio, the New York design firm behind Flyfish Club and several projects for Major Food Group, including the Michelin-starred Torrisi. The company's description of the room reads like a period piece: rich woods, Art Deco lighting, plenty of animal prints, custom Italian fabrics, imported furniture and hand-tailored staff uniforms. The stated reference point is the Wall Street era, the kind of place a deal might have closed over a martini.
The Founding 100
Caviar Club also runs a private membership program called The Founding 100, an invitation-only club offering members access to curated events and experiences. Lindsay Shapiro, a former private client manager at Moët Hennessy, leads membership and experiences alongside Falsetto. Individual and corporate memberships are listed on the restaurant's website, which also takes dinner reservations.
Who is behind it
Falsetto Hospitality, formerly known as Handcrafted Hospitality, is the group behind Tacocraft, Pizza Craft and the Apothecary 330 speakeasy. Falsetto also led the 2023 relaunch of Anthony's Runway 84.
It is one of several Fort Lauderdale arrivals the convention and visitors bureau highlighted for the season, alongside NAIA on Las Olas, Barchetta at the Omni Fort Lauderdale and the return of Pelican Landing at Pier Sixty-Six.
